When you look at these photos, it may appear that we are off the low carb wagon- but we are not. The food on the photo that looks like MASHED POTATOES is actually CAULIFLOWER!
This so awesomely delicioso! Here is the simple recipe:
1. Cook fresh -1 head or frozen 1 bag-cauliflower till tender.
2. Drain off liquid
3. Place hot cooked cauliflower into a food processor or Vitamix or BlenTec (I used BlenTec). Add about 1/4 cup heavy cream. Blend for 1 minute or till it looks like mashed potatoes.
Season with butter and sprinkle with a little black pepper.
Enjoy life with low carb tricks!
