Another Low Carb Breakfast

My low carb #breakfast 3 layers-
3 eggs (no hormones) scrambled, shredded cheddar cheese , topped with zucchini hash browns. (Zucchini shredded,1 egg scrambled and Parmesan cheese) mix and fry in coconut oil like hash browns.

Almond Meal Pancakes – Gluten-Free and Low Carb

GTGF – ALMOND MEAL PANCAKES

1 1/2 cup Almond Meal

1/2 cup Almond Milk

1 tsp baking soda
2 eggs or Eggbeaters (TM)
2 packets Splenda
2 TBLS Coconut oil or Extra Virgin Olive Oil

Mix the dry ingredients in a bowl. Hand mix or pulse in a food processor.
Place all wet ingredients in another bowl mix or blend.
Pour wet ingredients into the dry ingredients. Mix by hand or food processor.

Add a little water to get the pancakes to the consistency that meets your taste.

Enjoy

Put oil in the skillet.

Pour 1/3 cup of the pancake mix into the skillet.

Cook until brown on one side and bubbly on top.

Makes about 8 pancakes
