Sugar-Free Raspberry Chocolate Cheesecake


Can you believe that this wonderful cheesecake is low in calories? You better believe it because this smooth and rich chocolate cheesecake will impress your whole family. 

  • Servings: 6


1 pkg Sugar-free Chocolate Graham Crackers, crushed
⅓ cup Reduced-calorie Margarine, melted
¼ tsp Ground Cinnamon
1 Envelope Unflavored Gelatin
1 cup Fat-free Milk
2½ pkg Fat-free Cream Cheese, softened
2 tsp Vanilla Extract
14 Tbsp Stevia 
¼ cup Unsweetened Cacao
1 Cup Heavy Whipping Cream. , sweetened with Stevia
¼ cup Raspberries, divided


Preheat oven at 350 degrees F. Mix first 3 ingredients and stir well. Press onto bottom and 1-inch side up sides of 9×13″ pan. Bake for 8 to 10 minutes. Remove from oven. Let cool on a wire rack. Sprinkle gelatin over milk in a small saucepan. Cook over low heat. Stir until gelatin dissolves. Beat cream cheese at medium speed of an electric mixer until creamy. Add vanilla, beating well. Add gelatin mixture, beating until smooth. Add sugar substitute and cocoa. Beat until blended well. Fold in 1/8 cup raspberries. Pour mixture into prepared crust. Cover and chill for at least 3 hours. Mix with vanilla frosting and fold in raspberries slowly. Spread frosting all over set cheesecake.
